We are using a special vinegar for our sushi rice. The vinegar called Yusen-su. It's a vinegar made by sake lees (the solid material remaining after sake is brewed). It had been popular and used mainly as sushi vinegar in Edo Period (1603 to 1868). Yusen-su is more colorful and more flavorful. Its reddish tinted color is quite distinctive. Because this vinegar is just simply sweet and rich enough naturally, we don't need to add any sugar in our sushi vinegar. It just matches beautifully with raw fish. You will be so surprised how much sugar other restaurants use for their sushi vinegar to get the right flavor.
And don't forget! we use Tamaki Gold for our sushi rice. It's the finest Japanese short-grain rice in the world.
